    When choosing a tomato, look for firm, well-shaped fruit that smells fresh and has bright red, shiny skin. It’s important that you do not refrigerate tomatoes. This will damage the texture of the fruit and destroy the flavor. Instead, store them at room temperature.

    Tomatoes are low fat, low calorie, saturated fat free, sodium free, and cholesterol free. What more could you ask for in a healthy snack? A single serving of tomatoes has the fiber equivalent of one slice of whole-wheat bread. They are also rich in vitamin A, B, C, potassium, iron and phosphorus. Tomatoes are a great source of Lycopene, an antioxidant. Some researchers believe that Lycopene may be valuable in the prevention of certain cancers. Proponents also claim that Lycopene may lower the risk of heart disease and other serious diseases.
